Make Hectic Nights Easier With Easy Dinner Recipes

Crock Pot French Dip Sandwiches

Fall activities are heating up! Looking at my calendar for the next two weeks is making my head spin. I’m sure many of you are in the same boat as me… finding time to make dinner.

During busy weeks, I love to plan my menu with meals I can whip up in a snap or have a slow cooker do the work for me.

Kids will love Shelley Simpson’s Simple Hot Dog and Potato Hash. With only 5 ingredients, it’s easy to make. To me, that’s a win-win recipe!

“When asked what they want for dinner, my kids would request this,” shares Shelley. “This was what they considered gourmet.” Serve with green beans or a salad and you have a kid-friendly dinner adults will enjoy too.

“This is so easy and delicious,” says Laura Davis of her Bacon Wrapped Chicken Breast. I love pepper jack cheese and jalapeno peppers. Top it off with a slice or two of bacon and how can you miss?! If you like your bacon on the crispier side like me, partially cook the bacon before wrapping it on the chicken. This recipe is a real winner.

David Henson’s Homemade Chicken Hot Pockets are better than the sandwiches you find in the frozen food aisle at your local grocer. “I created this out of necessity for something different and something easy to eat at work,” explains David.

David stuffs his with roasted red peppers and mushrooms. But, use a combo of veggies your family loves. Don’t have puff pastry on hand? Try them with crescent roll dough. They’ll come out just as great.

When pressed for time, the last thing I want to do is a ton of dishes. That’s why I’m a fan of Amy Cox’s Philly Cheesesteak Calzones. Besides a baking sheet, no other pans required!

“My husband couldn’t get enough, and the kids loved it,” exclaims Amy. “It’s now a must have every other Friday night at our house!” I love to serve these with a side of horseradish, but they’re great on their own too for the kiddos. These hearty calzones are a must-try for any fan of traditional Philly cheesesteaks.

Honorary Kitchen Crew Member Missy Wimpelberg is a big fan of Sheila Farrah’s Chicken Sloppy Joes. “Prepared and on the table in 15 minutes,” reviewed Melissa. “Plus there’s the big added bonus… all seven people in my family enjoyed it!” When you can get that many people to love dinner, you know you’ve got a great recipe.

Sheila’s a fan of making these when having guests over to watch the game, but they’d be good on a weeknight too. The microwave does all the work for ya. Serve alongside some sweet potato fries, and you’ll have the family asking for more.

“These sandwiches are so easy and delicious,” says Teresa Carter of her Crock Pot French Dip Sandwiches recipe. “We have them at least once a week.”

The slow cooker is a cook’s best friend on a busy day. These sandwiches are a very filling meal. It’s always fun to dip a sandwich, and the au jus is so flavorful! Plus, your kitchen will smell fab while this is cooking.
