I pretty much love lemon everything. As a kid, I would politely say “no thank you” if a dessert had lemon in it. Thankfully, my taste buds changed. Now, I can’t get enough lemon! And one of my favorite ways to satisfy my lemon fix is through desserts.
Unlike some lemon cakes, Laura Davis’ Lemon Lovers Pound Cake recipe has a very lovely, light lemon flavor … just enough to satisfy. “[This is] excellent for picnics or maybe even a potluck,” says Laura. The icing glaze tops it off with the right amount of sweetness. Just perfect.

Lemon desserts are always so refreshing after a big meal. Heather Kelley’s Triple Layer Lemon Meringue Pie was especially light and delicious. This is actually very easy to put together. The hardest part is watching it chill in the refrigerator and not digging in. The marshmallows are an unusual meringue-style topping and added a nice sweetness to the tart lemon layers. I just loved this recipe!
