I come from a long line of fisherman. I think I was born to love all types of fish recipes. My husband, on the other hand, is more of a meat and potatoes kind of guy. Recently, I have been trying to get more fish into our diets (and convert him to a fish-lover after all these years!).
I think even those of who aren’t too keen on fish will love Leslie Holt’s Almond Crusted Tilapia. “This recipe calls for almonds. However I have used pecans [too],” says Leslie. The breading of crushed almonds and Parmesan cheese makes this light fish a simply delightful entree. Go on, give it a try!
Cosette Khoryati’s Fish Fillets with Brown Butter is another delicious recipe. “This is one of my favorite fish dishes,” says Cosette. “Quick, simple and delicious.” I’ve enjoyed fried fish my whole life, but I never had it this way. I loved the brown butter sauce over the fish. I will definitely be fixing this one again.
One recipe I enjoyed (and a recent Blue Ribbon winner!) is Patti Jagodzinski’s Lemon Pepper Panko Crusted Fish. The presentation for this dish is really pretty. And, along with the lemon Panko crumbs, the potato and the Parmesan cheese in the breading were a nice addition.
Being a southerner, I grew up loving shrimp and grits. It was great to see that northern-girl Linda Franklin discovered one of our southern staples. “Being from New York, I could not imagine this combo,” says Linda. “After one taste, I was sold.” Next time, I may add some butter to the grits for an even creamier consistency. You know how we love butter in the south!
Kat Ryan’s Linguini and White Clam Sauce may not have butter in it, but it has so many wonderful flavors (there is a lot of garlic in this dish!). I admit, I was a little nervous about trying this. I love clams, but am not used to cooking with them. Well, this dish turned out like a dream – very tasty!
“This recipe is the first fish sandwich that I have ever created,” says Carmell Childs. Her Spicy Salmon Sandwich with Ginger-Peperoncini Aioli definitely has one fancy name. But, it’s one simple sammie to put together. This marinade and aioli are one fearsome duo! Your guests will be wowed when they bite into these.
Another sandwich I love is a good tuna sandwich. When I stumbled across Karina Alcala’s Sweet and Spicy Tuna Salad Sandwich it made me think of eating tuna sandwiches as a kid. Only Karina’s recipe is definitely a kicked-up version of what I remember (no white bread here!). “I love sweet and spicy foods and I found a way to incorporate this with some canned tuna,” says Karina. What a different way to enjoy tuna! The chipotle mayo added a really nice kick.
I know, fish can be an acquired taste. But it so versatile to cook with. It can be fried, baked and even grilled. With so many wonderful ways to eat fish, your bound to find a preparation method that your meat and potato friends will love!
