“Made this last night. LOVED it! It was easy to make and super tasty and healthy. Trying to eat healthy so opted to forego the cream. Also opted for a different type of lower-fat shredded cheese as a topping. In terms of spices, didn't have coriander but added white pepper and a little extra jalapeno. My husband liked this so much he got up this morning and incorporated the leftovers into an omelet! This seems like it would freeze OK, so we're giving that a try for an even quicker weeknight meal.
