When looking to put healthier meals on the table, chicken is an excellent option. Boneless, skinless chicken breasts are packed with protein (3 oz has 27 grams), low in saturated fats, and a great source of Vitamin B. Skinless chicken thighs are also a terrific option as they are high in protein, Vitamin B, phosphorus (necessary to keep bones strong), and zinc (an essential nutrient for the body). While chicken thighs are higher in fat than chicken breasts, they’re high in monounsaturated fats (aka the healthy fat). But don’t fear the family thinking it’s a boring chicken meal when they ask what’s for dinner. It’s true, chicken alone may be a bit bland. However, when they try these healthy chicken recipes that are lighter in calories but full of flavor, they’ll be asking for seconds.
"I love vegetables and was a bit tired of traditional bread stuffing so I decided to try something a little different. It turned out to be a winner when I stuffed chicken cutlets with zucchini, caramelized onion and just to add some zing a smear of sun-dried tomato spread." - Lori Ann
"I have to say, this is my favorite recipe and my family just loves them. They are only 277 calories for the whole recipe. A must add to your recipe file...." - Marti
"This is a staple for my low carb tendencies! However, I love this dumped all over my Cilantro Lime Rice. So flavorful and easy. The aroma while cooking definitely causes some salivating." - Heather
"Although saltimbocca is typically made with veal the chicken version is also really good and it is so simple to make that you can easily do it on a weeknight! This dish is as easy to make as cooking the chicken until both the sage and prosciutto is nice and crispy and then making a quick lemon pan sauce which adds even more flavour and capers are sometimes added to the sauce. If you are looking for a way to eat a bit lighter without sacrificing any flavour, this chicken saltimbocca is definitely a tasty way to go!" - Kevin
"This air fryer recipe is a great guilt-free way to enjoy fried chicken without the frying. The seasoning on the fried chicken is fantastic." - The Test Kitchen
"This 30 Minutes Fiesta Chicken Soup is just the type of recipe that lets us put a home cooked meal on the table without a lot of time or hassle. When I make this, I put the chicken breasts and broth in a slow cooker in the morning and cook on low for about 8 hours. I remove the chicken, shred it, strain the broth, then proceed with the recipe. Slow cooking the chicken ensures it’s tender and makes an even richer broth. All that said, a rotisserie chicken will work just as well." - Stacey
"This our kind of easy weeknight dinner recipe. The white wine adds some acidity to the recipe. The sun-dried tomatoes are a bit tart and a burst of flavor. It's an easy dinner to impress guests. If you're looking to lower carbs, it would be delicious served over cauliflower rice too." - The Test Kitchen
"This is my easy dump it all in the Crock Pot recipe that I have come to love even more because it takes me all of five minutes to throw together – which means I can have them more often. It’s suitable for a ton of diets but it doesn’t feel at all like diet food, and I just eat them because they are stinking delicious." - Christy
"I developed this recipe to use ingredients that I usually have on hand. It is very flexible." - Elaine
