“This recipe produced a very good roast. I assumed the vinegar (I used both white and apple cider) acted as a tenderizer, because the meat (I used a 4lb good quality chuck roast) was easy to cut and shred. I slow roasted on the stovetop for about 3 hours. I sort of hoped the beef would take on more of the coffee flavor (I used 2 cups espresso), but I found that the resulting taste was a simple, yet still delicious, beef flavor. The gravy was also quite good. Overall, this is an easy and delicious recipe. I used the leftovers to make pulled beef sandwiches with spicy, homemade BBQ sauce. Thank you for sharing!” - tsteeltown
