Begin by completely drying off chicken with a paper towel.
Brush oil on both sides of chicken before adding to the pan.
Make sure to season your chicken prior to browning.
Turn your stove to a medium-high heat.
Ensure your pan is nice and hot by testing with a few drops of water. If the water sizzles, your pan is ready.
Then, using tongs, add your chicken to the pan.
Allow chicken to brown for a few minutes before attempting to flip. If your chicken does not easily come away from pan, it's not ready to flip.
Make sure to brown meat in small batches. If a pan is too crowded, the meat will not brown properly.
