How do you beat the heat and still enjoy a sweet treat during the summer? By whipping up delicious no-bake dessert recipes! This week I’m sharing five Blue Ribbon recipes that will have your family begging for seconds.
Lisa Johnson’s (Fort Worth, TX) Strawberry Icebox Pie is so simple to make. The graham cracker crust is perfect for the filling that’s creamy and fluffy. With a tart and sweet flavor, there are bits of strawberry in every bite.
“You may substitute any frozen fruit of your choosing,” Lisa mentions. We used strawberries, but frozen raspberries or blueberries would also be refreshing.
Brandy Woodbury’s Raspberry Cream Cheese Pie is a quick and easy pie for any occasion.
“When asked what can I bring, the answer is always please bring that delicious cream cheese pie,” Brandy shares.
The tart raspberry filling goes nicely with the tangy cream cheese filling. A store-bought graham cracker crust adds a little crunch to every bite.
You probably have all the ingredients in your kitchen to whip this up today. Just make sure to keep this summer dessert refrigerated, or it will get mushy.
“If you want a change from your usual chocolate pudding pie made from Jell-O, this is such a wonderful change,” thinks Betty Graves (Germantown, TN) of her White Chocolate Pie. “It is nice and creamy and so easy to make.”
You can use a store-bought crust, but I used Betty’s easy crunchy homemade crust. The white chocolate flavor is very light. Top the pie with white chocolate chips and a drizzle of your favorite chocolate sauce for a wonderful summertime dessert.
Suzanne Marzano (Toledo, OH) turns a favorite ice cream truck favorite into a delicious dessert served in a 9×13 baking dish.
“Family favorite,” says Suzanne of her Drumstick (Nutty Buddy) Dessert. “Best if frozen and then take it out 20-30 minutes before serving; it makes it easier to cut.”
This recipe really does bring the essence of that childhood favorite to life through the different layers.
I love the peanut and waffle cone crust. The hint of peanut butter from the second layer and the richness from the chocolate pudding layer is amazing. Topped off with Cool Whip and Magic Shell really takes this dessert over the top.
Another layered dessert that mimics an ice cream treat is Dana Moore’s (Alvaton, KY) Neapolitan Dirt.
“I was making the usual dirt for company and opened the cabinet to get out the boring vanilla pudding,” explains Dana. “However, a box of strawberry cream pudding fell out of the cabinet, so I thought I would try it. The result was amazing!”
An Oreo crumb crust layer acts as a platform for the rest of the yumminess. The cream cheese layer is light and fluffy. It reminded me of a no-bake cheesecake.
Finally, the pudding layer is full of strawberry flavor and makes this easy dessert special. Oreos on top add a bit of crunch. Let’s be honest Oreos sprinkled on top of almost anything is seriously delicious.
Cool and creamy, these refreshing and delicious no-bake dessert recipes are perfect for a summer sweet tooth. You can find even more recipes in our no-bake dessert recipe collection. Happy Pinching!
