Do you love to brunch? I do! If you ask me to brunch, I’m guaranteed to say yes… except if it’s on Mother’s Day. With the cost and the crowd, I prefer to stay home and have something made for me. But for brunch to happen, I typically find a few easy recipes anyone can make and let my family surprise me. Subtly drop the hint to your family that you’d love any of these Blue Ribbon brunch recipes.
Omelets are not something I typically make for myself and I love that Peggy Lawhon’s (Brentwood, TN) Spicy Brunch Omelet is packed with flavor.
“It is spicy but yummy,” thinks Peggy. “Serve with a side of fresh cubed melons, fresh fruit, and a warm croissant.”
The nacho sauce with the breakfast sausage is creative and delicious poured over the cheese omelet. You’ll get 2-3 omelets from the recipe and will definitely have plenty of sausage nacho cheese sauce leftover. If you don’t need to make more omelets, save the sauce for a cheese dip snack for later in the day.
Another egg option is Andrea Chambret’s Sunday Easy Breakfast Casserole.
“Easy, fast, filling, and yummy,” says Andrea, and I couldn’t agree more.
Each bite of this easy casserole is like eating a whole breakfast in one mouthful. It’s filled with everything you love at breakfast – eggs, sausage, ham, potatoes, onions, peppers, and cheese. Lots of cheese!
Love French toast? Then you have to try Kellie Parker’s (Burkburnett, TX) Raspberry and Cream Cheese Stuffed French Toast is easy and decadent.
Kellie and her husband first tried this recipe at a bed and breakfast and it was memorable for them. She recreated that recipe and, oh boy, is it good.
The savory cream cheese paired with the raspberries is amazing. This is a baked French toast and incredibly easy to make.
As it bakes, the outside gets slightly crisp. Inside, the filling melts and is warm and gooey with chunks of raspberries. Yum!
Creamy and savory, Dana Ramsey’s Asparagus and Mushroom Quiche is delicious. It’s not your typical quiche recipe that uses a lot of eggs.
“This is very easy and very yummy,” says Dana. “The Dijon mustard really adds flavor to this.”
The filling in this recipe is loaded with chunks of asparagus and mushroom along with gooey cheese. It’s a classic flavor combination that goes perfectly with the sweet crescent roll dough. If you can open a can of crescent dough, you can make the crust for this quiche.
If you’re not into a full sit-down brunch or love baked goods at brunch, Jessica Silva’s (East Berlin, CT) Almond Crumb Scones With Honey Butter are a delicious option.
“Yummy, sweet, a little crunchy, a lot nutty, and perfect with the accompanying honey butter,” shares Jessica.
Soft and lightly sweet, these scones have a toasted almond aroma as they come out of the oven. Spread the honey butter on the scones when they’re warm. It melts into the scone making them irresistible.
