When thinking about what topic I should share this week, spaghetti came to mind. I always have a box in my pantry and it’s a great (and inexpensive) way to bulk up a meal. Spaghetti and meatballs are delicious, but there are many other ways to serve spaghetti. Here are some easy spaghetti recipes for tonight’s dinner.
“I came up with this recipe using a classic ratatouille recipe and adding hot Italian sausage and serving over spaghetti,” explains Terri Rountree (Whitewright, TX).
What Terri came up with is a Spicy Ratatouille With Sausage & Spaghetti that’s hearty and delicious.
Ratatouille is basically a stew filled with veggies and spices. This version uses zucchini, mushrooms, and eggplant that simmers with Italian sausage. The sausage was my favorite because it adds a ton of flavor. Serve over a bed of spaghetti for a wonderful meal.
Another recipe that packs a punch of veggies is Nancy Mackel’s (Bonney Lake, WA) Cheesy Pasta and Veggie Frittata.
“My family loves spaghetti but I always make too much pasta,” reveals Nancy. “This is a great way to use that extra pasta. It’s also a great way to get those vegetables into picky eaters.”
There are a few steps to this recipe, but completely worth it.
Nancy packs this frittata with zucchini, yellow squash, spinach, mushrooms, and tomatoes. You can add shrimp or chicken to make it a complete meal (I opted for shrimp). Very hearty, this frittata has a cheesy crust on top that I loved.
Michael Jordan’s (Pasadena, TX) Cube Steak Parmesan Over Spaghetti is filled with flavor.
“A true Italian palate pleaser,” thinks Michael. “So simple to make and can be altered to anyone’s taste buds.”
If you’re looking for an easy dinner recipe, try this cube steak Parmesan. It reminds me of spaghetti with a ground meat sauce. Panko crumbs form a lovely golden brown crust on the cube steaks. So good!
Now, I’m going completely opposite from traditional Italian flavors and sharing Michelle Griggs’ (San Diego, CA) Stir Mein (Stir Fry/Lo Mein). Who says you need to get takeout to have Chinese food at home?
“Well, I’ve attempted to make lo mein at home a few times because it’s my favorite Chinese dish,” shares Michelle. “The sauce tastes like a perfect mix between a stir fry sauce and a lo mein sauce.”
This chicken stir-fry is so good you’ll want to eat this all the time. The sauce is tangy and sweet with a nice nutty taste from the sesame oil. The noodles (spaghetti) soak up all the delicious flavors.
Cheesy and creamy, this Easy Chicken Tetrazzini comes together in a snap.
“Came up with this recipe one day from what I had on hand in my pantry and freezer,” says Lynelle Caldwell (Durango, CO). “Became one of my family’s favorites.”
The flavors from the mushrooms, pimentos, and Alfredo mix with a cheese sauce. It bakes together making the chicken and spaghetti infuse with all those yummy flavors. This is sure to be a hit on your dinner table.
