Tired of the usual breakfast routine? We’ve got a healthy and delicious for you – baked avocado eggs. This is something we’ve seen floating around Facebook and Pinterest and decided to give it a try. After one bite we were hooked. These are a healthy and filling breakfast option. We saw several different ways to prepare them and took a bit of this and that to create the perfect recipe.
The creamy avocado along with the egg is super yummy. We tried one version with simple salt and pepper. For the other, bacon bits and cheese were sprinkled on top. Both were delicious! Get creative and add your favorite toppings. The list is endless!
What You’ll Need
- 1 avocado
- 2 medium eggs per avocado
- Salt and pepper
- Toppings (optional, we used bacon and cheese)
- A sharp knife
How To Make the Avocado Eggs
1. Preheat the oven to 400F. Cut the avocado lengthwise.
2. Remove the pit.
3. Using a spoon make the hole of the avocado slightly bigger. Large enough to hold an egg.
4. Pour one egg in the half.
5. Place in a pan. To prevent the avocado from tipping, we folded a piece of aluminum foil and balanced the avocado on top.
6. Add salt and pepper, to taste.
7. Add additional toppings, if desired.
8. Bake for 15-20 minutes at 400 degrees.
9. The finished avocado eggs.
Test Kitchen Tips
- The size of the egg determines how much avocado to remove. We used a medium egg to keep more avocado.
- Baking the eggs for 15-20 minutes cooks the egg to a medium hard boiled egg consistency. If you want your egg cooked less or more adjust the cooking time.
- If you use a smaller egg and leave more avocado, the meat slightly discolors in the baking process. This does not affect the flavor at all.
