Boil water.
Heavily salt boiling water.
Add pasta and gently stir. If using dried pasta, for al dente cook for 1 - 2 minutes less than packaging. If cooking with fresh pasta, keep an eye on it. Fresh pasta cooks in 1 - 3 minutes.
Taste pasta to see if it is done.
Remove 1 cup of pasta water. Then drain remaining water.
Place pasta back into pot and add sauce.
Next add reserved pasta water and mix. The starches in the pasta water will help to thicken the sauce.
Serve! You now have the perfect pasta.
