Squash is hard to dislike and with this zucchini and squash au gratin, it's near impossible. The freshness of the zucchini and yellow squash is accented (not hidden) by the addition of cream and cheese. Shallots and garlic are sauteed in butter and add a sweet onion flavor to the side dish.

Ingredients For zucchini and squash au gratin

2 mdshallots, minced

1 tspminced garlic

1 lgzucchini, sliced

1 lgyellow squash, sliced

1/2 cheavy cream
-
salt and pepper, to taste

sprinkle of oregano

Parmesan cheese, to taste
-
shredded cheese, just a handful to sprinkle
How To Make zucchini and squash au gratin

1Preheat oven to 450 degrees F.

2In a large skillet, saute shallots and garlic in the butter. Cook until the shallots are translucent.

3Add zucchini, yellow squash, and heavy cream. Add salt, pepper, oregano, and Parmesan cheese.

4Cook 8 to 10 minutes or until mixture is bubbly.

5Transfer to an oven-safe baking dish. Sprinkle with a little more Parmesan and the shredded cheese.

6Bake for 10 to 14 minutes or until mixture is bubbly and golden brown on top.
