I looked and looked for a recipe for fried sweet potatoes. I was unhappy with any recipes I found, so I came up with my own. These were a hit with ALL my kids. And we, as parents, know how hard that is. I have 4 kids, and next time I will be doubling my recipe.

Serve these sweet potato tidbits as a side dish or a snack. If you dip them in honey, as suggested, they could almost be a dessert. The batter is seasoned with sweet and savory spices along with a touch of sugar. Once fried, the batter crisps and gives the sweet potato fries a nice balance of sweet and savory.

Ingredients For fried sweet potato tidbits

  • 1/2 c
    pancake mix (I use Bisquick)
  • 1 lg
    egg
  • 1 1/4 c
    milk (needs to be thin, if not thin enough add more milk)
  • 1 tsp
    garlic powder
  • 1 Tbsp
    cinnamon
  • 1 Tbsp
    granulated sugar
  • 1/4 tsp
    cayenne pepper (optional)
  • 2 lg
    fresh sweet potatoes
  • vegetable oil
  • deep fryer or Fry Daddy

How To Make fried sweet potato tidbits

  • Pancake mix, egg, milk, garlic powder, cinnamon, and sugar in a bowl.

    Mix the first 7 ingredients together. Make sure the batter is thin. If not thin enough, add a little more milk.
  • Sweet potatoes cut into thin and short pieces.

    Cut sweet potatoes into thin fries and then into short pieces.
  • Coating sweet potato pieces in batter.

    Add sweet potatoes into your batter and stir until well-coated.
  • Frying sweet potato pieces in oil.

    Heat oil to 375 degrees. Drop by spoonfuls into the hot deep fryer and fry for 7 minutes.
  • Fried sweet potatoes on a paper towel.

    When deep golden brown in color, remove and place them on a paper towel to drain excess oil. Let cool for about 10 min. I serve mine with ranch dressing or honey.
