We have so many generous friends with gardens who send fresh vegetables and herbs our way this time of year. I love tomatoes, my husband loves bacon, so I concocted a bacon tomato pie. Served with a salad, it hits the spot on a warm summer day. Hope you enjoy it as much as we did.

All the wonderful, savory flavor of a BLT in a delicious summer pie. The filling is creamy, cheesy, and tangy. The smoky bacon bits throughout and the wonderful mix of herbs and tons of flavor to this tomato pie. Sprinkling Panko crumbs on top add a lovely texture to the pie. Perfect for a summer cookout.

Ingredients For bacon tomato pie

1pie crust shell
-
3 mdtomatoes, peeled, sliced thick

1/2 tspsalt

1/2 tsppepper

pinchbasil, fresh

1onion, chopped

4 slicebacon, cut up, cooked

1/2 cmayonnaise
-
2 ccheddar cheese, shredded
-
rosemary sprigs
-
panko bread crumbs
-
thyme, leaves
How To Make bacon tomato pie

1Place pie crust into a pie plate. Cook at 350 degrees for 10 to 15 minutes until lightly golden brown.

2Fry bacon and add onion. Cook until tender. Drain and set aside.

3Place layer of tomatoes in browned pie shell. Top with basil leaves, rosemary, and thyme.

4Mix mayonnaise and cheese. Add bacon and onion mixture. Spread over tomatoes.

5Place more slices over mayo and cheese mixture, adding more basil leaves, thyme sprigs, and rosemary. Sprinkle with Panko crumbs.

6Bake at 375 degrees for 35 minutes. Cool before cutting.
