Ingredients For deep fried mashed potatoes

2 ccold mashed potatoes put through a ricer or food processor

3 lgeggs divided

1 Tbspparsley minced
-
1/4 cparmesan cheese
-
2 tspdried minced onion
-
3 clovegarlic minced
-
1/4 ccooked and crumbled bacon
-
salt and pepper to taste

1 cpanko bread crumbs

oil for frying
How To Make deep fried mashed potatoes

1Mix together mashed potatoes, 1 egg, parsley, parmesan cheese, onion, bacon, garlic, and salt and pepper. Place mixture in freezer for 20 minutes.

2Whip the 2 remaining eggs in one bowl. Add bread crumbs to another bowl. Take mashed potatoes and roll them into a ball. Dip in egg mixture then roll in bread crumbs. Place back in freezer for 15 minutes.

3Deep fry 375 degrees for about 3 or 4 minutes. Serve
