Ingredients For mexican baked potato

  • leftover or fresh baked potato(es)
  • lean taco meat
  • canned or homemade enchilada sauce
  • 2% cheddar cheese, shredded
  • red onion chopped, or pico de gallo
  • light sour cream

How To Make mexican baked potato

    Slice, dice, cube or smash baked potato on plate, top with taco meat, cheese, diced onion, and drizzle on enchilada sauce. Pop into micro for 2-3 min. Garnish with sour cream. Other good garnishes would be diced tomatoes, pico de gallo, salsa verde, red salsa.
