Ingredients For hash brown egg nests

olive oil spray
-
1/2 conion, minced
-
1 - 2 cshredded hash brown potatoes, thawed

1 tspgarlic powder
-
salt & pepper, to taste

12 Tbspbutter, divided
-
6 lgeggs, slightly beaten

2 Tbsponions, diced
-
1/4 cgreen bell pepper, diced
-
cheddar or swiss cheese, shredded
-
1 ozham, diced or 6 slices bacon, cooked crisp & crumbled
-
1 tspgarlic powder with parsley
-
salt & pepper, to taste
How To Make hash brown egg nests

1Preheat oven to 375 degrees F. Lightly spray a muffin tin with oil spray.

2Combine potatoes, 1/2 C onion, garlic powder, salt & pepper.

3Fill each muffin tin with 1/4 C of potatoes & press along the side of the tin so that it forms a nest. Place 1 Tbsp of butter in the bottom of each "nest". Bake 35 minutes or until golden brown & edges are crispy.

4While nests are baking, combine the eggs, green pepper, remaining onions, garlic powder, parsley, salt & pepper in a medium bowl.

5Remove nests from the oven when golden brown. Let cool 10 minutes.

6Some lay some ham in each.

7Fill each cup with about 3 Tbsp of egg mixture.

8Sprinkle with cheese.

9Return to the oven & bake an additional 17 - 20 minutes or until eggs are fully cooked.
