1 can12 ounce, solid white tuna (water-pack), drained

1/4 cfinely chopped onion

1/4 cthinly sliced celery

1/4 cshredded carrot

1 Tbspcapers, rinsed and drained

2 Tbspolive or canola oil

2 Tbsplime or lemon juice

1 Tbspdijon-style mustard

1 Tbspchampagne vinegar or white wine vinegar

1 1/2 ctorn mixed salad greens

1/2 cslivered almonds, toasted

2whole wheat pita bread rounds, halved crosswise - optional
How To Make diabetic tuna salad

1In a medium bowl, combine tuna, onion, celery, carrot, and capers; set aside. For vinaigrette: In a small screw-top jar, combine olive oil, lime juice, mustard, and vinegar. Cover and shake well to combine. Pour vinaigrette over tuna mixture; toss gently to combine. Add greens and almonds; toss gently to combine.

2Optional use: Place a pita bread half in each of four shallow salad bowls. Top pita bread halves with tuna mixture.
