My Uncle Wiley lives in Winter Haven Florida. We try to visit him a couple of times a year. I love to cook, so I cook while I am there, unless we are going to some of the great restaurants in the area. But he makes the best chicken salad I have ever eaten. I brought this recipe home with me. My family and friends absolutely love it, so I thought that I would share it with you.

Yum, Uncle Wiley knew what he was doing with this chicken salad recipe. It's creamy with tender, juicy chicken. Crispy grapes and crunchy pecans add a lovely texture to the chicken salad. Craisins add sweetness and tartness that put the flavor over the top. The addition of sour cream to this chicken salad adds a delicious tang that we can't get enough of. Ingredients For uncle wiley's chicken salad

  • 4 c
    poached chicken (diced)
  • 1 c
    celery (finely chopped)
  • 1 c
    pecans (chopped)
  • 1 c
    Craisins
  • 1 1/2 c
    white seedless grapes (cut in fourths)
  • 1 c
    white raisins
  • 4 oz
    sour cream
  • 1 c
    Kraft mayonnaise
  • salt and black pepper, to taste

How To Make uncle wiley's chicken salad

  • Poached chicken diced.

    Poach chicken (boneless skinless) breast. This takes the longest amount of time. I often cook my chicken the day before and store it in a Ziploc bag in the fridge. When you are ready to make the salad you dice the chicken.
  • Chicken salad ingredients mixed together in a bowl.

    In a large bowl mix all of the ingredients; salt and pepper to taste. You may need a little more mayonnaise.

    I serve it with crackers or it makes a great sandwich with lettuce and tomatoes.
