For the Chicken:
1/2 cup all purpose flour
3 large eggs, beaten
1/4 cup grated ("powder") Parmesan cheese
1/3 cup dry Italian bread crumbs
5 boneless, skinless chicken breasts, towel dried
For the Bruschetta Topping:
28 oz Italian diced tomatoes, drained
4 cloves garlic, minced
1 TB olive oil
1/4 cup freshly shaved Parmesan cheese
1/4 cup fresh basil leaves, chopped
1 1/2 TB balsamic vinegar
kosher salt and freshly ground black pepper to taste
