Makes 1 pie (5-8 servings)
INGREDIENTS
Crust
2 1/2 cups unbleached all-purpose flour
1 1/2 teaspoons sugar
1 teaspoon salt
1/2 cup (1 stick) chilled unsalted butter, cut into 1/2-inch cubes
1/2 cup chilled lard cut into 1/2-inch cubes
5 tablespoons (or more) ice water
Filling
8 medium apples (if you can find Pippins, so much the better), diced
3/4 cups plus 2 tablespoons sugar
2 teaspoons powdered cinnamon
1 teaspoon powdered ginger
2 tablespoons rosewater
