I created this recipe for a tasty, healthy, moist turkey meatloaf. This recipe is made with salt-free seasonings. There is so much flavor that you do not even miss the salt. My husband loves this dish served with mashed potatoes, creamed spinach, and turkey gravy.

This healthy turkey meatloaf is packed with fresh veggies, such as mushrooms and spinach. Chopped celery, shallots, and garlic help to season the ground turkey breast. It's so flavorful, you don't miss the salt. Homemade toasted croutons help to hold the meatloaf together. We served this with a salad for a healthy and satisfying meal. But it would be delicious with creamed spinach and mashed potatoes if you want a touch of decadence.

Ingredients

  • 3 tablespoons extra virgin olive oil
  • 8 ounces mushrooms, chopped
  • 2 stalks celery, finely chopped
  • 1 - 2 - shallots, finely chopped
  • 3 cloves garlic, finely chopped
  • 6 ounces fresh baby spinach, chopped
  • 4 tablespoons salt-free all-purpose seasoning, divided
  • 2 teaspoons pepper, divided
  • 2 tablespoons Earth Balance buttery spread
  • 3 slices whole grain/whole wheat bread, cubed small
  • 1 teaspoon garlic powder
  • 1/4 cup 1% milk
  • 1 large egg
  • 1 pound organic ground turkey breast
  • 1 cup shredded Italian cheese blend

The buttery spread can be swapped with 2 Tbsp of olive oil or avocado oil.
  • Heat extra virgin olive oil in a saute pan over medium heat. Add mushrooms and celery.

  • Melt butter and add bread cubes. Saute until toasted.

    In a medium bowl, blend milk and egg. Set aside.
  • Add spinach mixture and bread cubes.

  • Add ground meat and shredded cheese.
