Ingredients For southern coastal clam cakes

2 can(6 1/2 ounces each) or 12 ounces fresh chopped clams. if canned, drained.

2large eggs

1 csaltine cracker crumbs (about 30 crackers)

2 Tbspfinely chopped green onion tops

1 Tbsplemon juice

1/2 tspdried thyme leaves, crumbled

3 Tbspvegetable oil

lemon slices and tartar sauce, optional
How To Make southern coastal clam cakes

1In medium size bowl, combine clams, eggs, cracker crumbs, green onion tops, lemon juice, and thyme.

2In large skillet, heat oil over moderate heat. Spoon the clam mixture into 4 mounds in the skillet. Cook clam patties until browned on both sides, about 5 minutes for each side.

3Transfer clam patties to warm serving platter and garnish with lemon slices. Serve with Tartar Sauce while hot and delicious!
