Ingredients For salmon with mango vinaigrette
- SALAD

24 ozmixed lettuces (tender green tango, red oak, sweet frisee, lollo rossa)

2 smmango, diced

1avocado, diced

1 smred onion, diced

2 lbsalmon fillet

8 ozalfalfa sprouts

2 Tbspsesame seeds

2 Tbspchia seeds

2 Tbspsunflower seeds
- VINAIGRETTE

6 cmango puree

3 Tbsphoney
-
2 tspmustard

2 Tbsplemon juice

salt and pepper to taste

3/4 cred wine vinegar

1 3/4 colive oil
How To Make salmon with mango vinaigrette

1Wash vegetables thoroughly.

2Cut the mango, avocado and the onion into small cubes.

3Remove the skin from the fish fillet and cut into 1 inch cubes.

4Brush the salmon cubes with olive oil.

5Grill the salmon cubes for 5 to 6 minutes.

6Meanwhile, in a bowl, combine mango puree, honey, mustard, lemon, vinegar, salt and pepper and let infuse for a few minutes.

7Add olive oil to mixture slowly while mixing continuously until emulsified.

8Adjust seasoning to taste.

9In 8 small bowls add the lettuce, avocados, onions, handle and the salmon
