Ingredients For cucumber topped cod

  • 4
    (6 oz.) fresh or thawed cod fillets, about 1/2-inch thick
  • 1/2 c
    flour
  • salt to taste
  • pepper to taste
  • 1/4 c
    butter or margarine
  • 2 c
    peeled and sliced cucumber
  • 2 clove
    garlic, minced
  • 2 tsp
    chopped fresh dill weed
  • 2 Tbsp
    lemon juice

How To Make cucumber topped cod

    Rinse fish; pat dry with paper towels. Coat fish with flour. Season with salt and pepper.

    In large skillet heat butter. Add fish. Cook over medium heat for 5 to 6 minutes or until fish flakes with a fork (145 degrees F), turning once. Transfer to a warm platter.

    Add cucumber, garlic and dill to skillet. Cook for 2 minutes. Add lemon juice. Cook 1 minute more. Spoon over cod.
