This was so good I couldn't stop eating it. Its got a little kick but you can cool it down, by taking the peppers out for the kids. You can also use rice instead of the pasta.

Ingredients For spicy chicken pasta bake

  • 3 c
    cooked pasta i used small egg noodles
  • 1 sm
    bell pepper chopped fine
  • 1 sm
    onion chopped fine
  • 2 Tbsp
    olive oil
  • 2 clove
    garlic chopped fine
  • 2 c
    fresh spinach
  • 1 can
    cream of chicken soup
  • 1/2 c
    milk
  • 1 can
    rotel orginal or mild
  • 1/2 c
    sour cream
  • 1/2 c
    velvetta cheese diced
  • 2 c
    shredded cheese any kind ( chedder-pepper jack
  • 2 Tbsp
    jalapeno peppers chopped
  • 2 c
    cooked chicken cut into bite size pieces
  • salt and pepper to taste

How To Make spicy chicken pasta bake

    Cook pasta as directed but cook under one minute. Drain and set aside.

    Cook bell pepper, onion and garlic in olive oil until tender. add spinach and cook another 2 minutes and set aside.

    In large bowl combine soup, milk, rotel, sour cream, velvetta cheese, 1/2 cup shredded cheese, jalapeno peppers, salt and pepper. Mix well and add the pasta, spinach mixture and your diced chicken.

    Pour everything into a buttered 9x13 pan. Sprinkle the remaining 11/2 cups shredded cheese over the top and bake at 350 for 40 minutes.
