super quick and easy southwestern dinner
I took a pound of ground beef out of the freezer last night not knowing what the heck I was going to do with it. This recipe is what I came up with. Quick, easy, tasty and filling. I hope you like it, too.

Ingredients
- 1 pound ground beef
- 1 - large onion, chopped
- 1 teaspoon garlic powder
- 1-1/2 teaspoon chili powder
- 1 - slight tsp. ground cumin, or to taste
- 1 - 11 to 14.5 oz can corn, drained
- 1 - 14 oz. can black beans, rinsed and drained
- - 16 oz. tomato sauce
- - 14.5 oz can petite diced tomatoes
- - salt and pepper to taste
- - cooked rice (use instant for quicker cooking time)

Step 1Brown ground beef and onion together. Add spices and let simmer for a couple of minutes.

Step 2Add tomatoes, corn and beans. Simmer for about 20 minutes and serve over cooked rice.

Step 3NOTE: You can sprinkle with cheddar cheese when serving, if you like.
