Saturday nights at the bar is All You Can Eat Steak Night, Sunday night is Raven's Special Night. This week is Shepherds Pie with Whipped Cauliflower Topping. Why whipped cauliflower you ask, because I serve potatoes all the time. The whipped cauliflower adds more veggies to the mix and I think that it tastes better than plain ole mashed taters. Also, my regulars don't know that it's not taters and they could use all the veggies I can get into them!

Ingredients For shepherds pie with whipped cauliflower topping

nonstick cooking spray

1 lbground beef
-
1 smonion, chopped

1 clovegarlic, minced

1/2 tspsea salt

1 tspwhite pepper

1/2 tspdried thyme
-
1 Tbspketchup
-
1 Tbspflour
-
1 pkg(10 ounces) frozen mixed vegetables

1 pkgfrozen cauliflower
-
1 csour cream
-
1/2 cfreshly shredded parmesan cheese

1/2 ccold water
How To Make shepherds pie with whipped cauliflower topping

1Preheat oven to 400 degrees.

2In a large cast-iron skillet over medium-high heat, cook beef, onions and garlic until meat is browned.

3Add salt, pepper, thyme and ketchup.

4Sprinkle in flour and stir to combine.

5Add water and frozen mixed vegetables. Cook until vegetables are warmed throughout and liquid has thickened.

6Meanwhile boil cauliflower until very tender. Strain in colander, return to pan and add sour cream and parmesan.

7Using a hand-held mixer, whip cauliflower until smooth.

8Spread over meat mixture and bake uncovered for 20 minutes or until browned.
