    6-8 oz red snapper fillets
  • cooking spray
  • 1/2 tsp
    ground cumin
  • 1/4 tsp
    sea salt
  • 1/4 tsp
    red pepper flakes
  • 1/4 c
    chopped fresh cilantro
  • 1/4 c
    chopped, pitted green olives
  • 1/4 c
    bottled salsa
  • 1 can
    (16-ounce) pinto beans, drained
  • 1 can
    (14.5-ounce) diced tomatoes, drained

    lime wedges

How To Make veracruz style red snapper

    Preheat grill or broiler. Coat both sides of fish with cooking spray, and sprinkle with cumin, salt, and pepper flakes.

    Place fish on grill rack, or broiler pan coated with cooking spray. Cook fillets 5 minutes on each side or until flesh flakes with a fork.

    Combine cilantro and remaining ingredients, except lime wedges. Serve fish with salsa and lime wedges.
