Best fish dish I've had in a while, loved the stuffing! Served with cheesy mashed potatoes and broccoli cole slaw. Adapted from cookingwithcbp.blogspot.com.

1 Tbspbutter

2green onion, minced

1/2 smred bell pepper, diced

1/2jalapeno pepper, minced

1 Tbspall-purpose flour

1/4 cheavy cream
-
2egg yolks
-
1 Tbspdijon mustard
-
1 Tbspfresh chives, chopped

1 tspcayenne pepper
-
1 tspold bay seasoning
-
1/2 lblump crabmeat (i used louis kemp imitation crabmeat)

kosher salt & pepper

1 1/2 lbcod filet
How To Make crab stuffed cod

1Preheat oven to 400*. Melt butter on medium heat in a 9" saute pan. Add vegetables & cook until soft, about 3-5 minutes.

2Add flour and stir on medium heat until light blonde in color, about 4-5 minutes.

3Stir in heavy cream, then remove from heat.

4In a separate mixing bowl, combine egg yolks, mustard, cayenne pepper, chives and seasoning.

5Slowly add small amounts of vegetable roux to egg mixture, stirring constantly until well incorporated. Mix in crab meat, season with salt and pepper and keep cold.

6Make a small cut into the center of each piece of fish along the length, but don't cut all the way through.

7Season the pieces of fish with salt & pepper. Place 2 tablespoons of filling into the cut on each fish.

8Place on a baking sheet lined with parchment paper and bake 10-12 minutes.
