Ingredients For white barbecue chicken

  • 1/2 c
    mayonnaise
  • 3 Tbsp
    olive oil, extra virgin
  • 1/4 c
    apple cider vinegar
  • 2 Tbsp
    lemon juice
  • 1 tsp
    paprika
  • 1 tsp
    black pepper
  • 1 tsp
    garlic powder
  • 3 1/2 lb
    chicken pieces, bone in
  • MAKE IT SPICY:
  • 1/2 c
    tabasco

How To Make white barbecue chicken

    Mix all ingredients (except chicken) together well. Reserve 1/3 C mayo mixture; refrigerate until ready to use.

    MAKE IT SPICY: Add tabasco to marinade mixture.

    Pour remaining mayo mixture over chicken in a sealable zip lock bag; turn chicken in mixture to coat all sides. Refrigerate 2 - 3 hours or longer.

    NOTE: The longer you marinade the better the flavor. I usually marinate it at least 6 - 7 hours. Yummylicous!

    GRILL:
    Heat grill to medium heat for indirect heat. Remove chicken from marinade; discard marinade. Place chicken over direct heat 8 - 10 minutes or until seared, turning after 5 minutes.

    NOTE: The next time I make this, I will use the grill pan instead of the grill. Usually anything marinaded ususally ends up burning (black). I want to prevent that.

    Move chicken to indirect heat; cover, grill 18 - 20 minutes or until done (165 degrees F.), brushing occasionally with reserved mayo mixture.

    GRILL PAN:

    I cooked about 15 - 20 minutes per side.

    NOTE: This worked, but it stunk up the whole house for a couple days.

    GRILL USING DISPOSABLE ALUMINUM PAN:

    I cooked it about 40 minutes, turning it every 10 minutes.

    NOTE: This, I think is the best way that I have done it. I also tried it spicy...it was good!
