Ingredients For pancit

5chicken breast (*)
-
2 cchicken broth
-
3/4 ccelery; diced
-
1/4cabbage; sliced into strips
-
1onion
-
1/3 cscallions; cut into pieces

1 ccarrots; matchstick sliced

2 Tbspvegetable oil
-
3 Tbspsoy sauce
-
1 pkgrice noodles
-
1 clovegarlic
-
salt and pepper to taste
-
(*)try adding additional meats or substituting with shrim, pork, or beef
How To Make pancit

1Add vegetable oil in a large pan or wok. Saute garlic and onions.

2Cut chicken into bite size pieces and add to pan with garlic and onions. Cook until done.

3Wet the rice noodles to soften and set aside.

4Add the chicken broth and all the vegetables. Continue to cook for 10 minutes over medium heat or until the vegetables are at the done-ness you prefer.

5Add the rice noodles and soy sauce to the pan. Cook for about 5 minutes or until the noodles are soft.
