Ingredients For crock pot lemon artichoke chicken

1 lgonion, diced

5 clovegarlic, minced
-
1 Tbspgarlic powder with parsley

1 Tbspcanola or vegetable oil
-
1 - 6 oz. cantomato paste
-
1 tspthyme, dried
-
2 lbchicken tenders, skinless & boneless, cut into bite size pieces
-
salt & pepper, to taste
-
3 Tbspwhite wine vinegar
-
4 - 14 oz. canartichoke hearts, chopped, undrained
-
2 cancream of chicken soup
-
1/2 cparmesan cheese, grated
-
4 Tbsplemon juice
-
4 Tbspdijon mustard
-
1 ptbutton mushrooms, sliced
-
cornstarch
-
rice or noodles
How To Make crock pot lemon artichoke chicken

1Combine onion, garlic, garlic powder, oil, paste & thyme in a microwave safe bowl. Microwave for 4 - 5 minutes, stirring occasionally until onions are soft.

2Place chicken in the crock pot. Season with salt & pepper.

3Add in the onion mixture & white wine vinegar.

4Cover & cook on LOW for about 4 hours.

5Stir in the artichokes, cream of chicken soup, parmesan, lemon juice, Dijon mustard & mushrooms. Cover & cook on LOW for another 30 - 60 minutes. If needed, you may thicken it with cornstarch.

6Serve over rice or noodles.
