Ingredients For chicken in golden sauce

  • 2 lb
    chicken breast halves, skinless and boneless
  • 1 Tbsp
    lemon juice
  • 1/4 c
    all purpose flour
  • 1 tsp
    paprika
  • 1 dash
    freashly ground black pepper
  • 3 Tbsp
    butter
  • 1 clove
    garlic, halved
  • 1/2 c
    dry white wine
  • GOLDEN SAUCE
  • 1/4 c
    pan liquid
  • 4
    egg yolks, beaten
  • 1 tsp
    snipped parsley
  • 1 tsp
    snipped chives
  • `1/8 tsp
    ground nutmeg
  • salt and pepper to taste
  • 1/2 tsp
    lemon juice

How To Make chicken in golden sauce

    Skin and split chicken; rub with lemon juice. Mix flour, paprika, pepper, and 1 tsp salt in a paper or plastic bag. Add 2 or 3 pieces of chicken at a time; shake to coat well.

    Heat butter and garlic in an electric skillet set at 300 F. Once heated; discard garlic.

    Cook chicken until golden on both side; add wine. Cover; reduce heat to 220 F. Simmer 20 minutes or until tender. Uncover; cook an additional 10 minutes or until liquid is reduced to 1/4 cup.

    Remove chicken and reserve 1/4 cup pan liquids. Keep chicken hot in oven

    In sauce pan, combine 1/4 cup pan liquids, 4 beaten egg yolks, 1 cup whipping cream, 1 Tbs each snipped parsley and chives, and 1 tsp ground nutmeg. Season with salt and pepper.

    Cook and stir on low until slightly thickened. Add 1/2 tsp lemon juice.

    Pour sauce over chicken and serve.
