Whenever we had leftover fish no one wanted to eat it even though they liked it the first day. So I came up with this casserole which made them not only eat the leftover fish but like it! A lot! It could also be used with leftover chicken or turkey.

Ingredients For leftover fish (or turkey) casserole

1 1/2 cleftover fish

1/4 colive oil, extra virgin

1/3 cflour
-
1chicken bouillon cube
-
1 cwater
-
4 cmilk
-
1 pkgmixed vegetables, frozen

1/3 cparmesan cheese
-
1/2 ccheddar cheese, shredded

salt and pepper to taste
How To Make leftover fish (or turkey) casserole

1Cut the fish into bite size pieces and set aside. In a pot over medium heat add the olive oil and flour and stir for a minute. Add the bouillon cube and gradually add the water while stirring till it is fully incorporated. Gradually add the milk and stir well. Bring to a slow boil then add the vegetables and fish and stir.

2Add the cheeses, salt and pepper and stir well to make sure they are well distributed.

3Pour into a casserole and bake at 375 till the top is golden brown, about 30 - 40 minutes.
