Whenever we had leftover fish no one wanted to eat it even though they liked it the first day. So I came up with this casserole which made them not only eat the leftover fish but like it! A lot! It could also be used with leftover chicken or turkey.

Ingredients For leftover fish (or turkey) casserole

  • 1 1/2 c
    leftover fish
  • 1/4 c
    olive oil, extra virgin
  • 1/3 c
    flour
  • 1
    chicken bouillon cube
  • 1 c
    water
  • 4 c
    milk
  • 1 pkg
    mixed vegetables, frozen
  • 1/3 c
    parmesan cheese
  • 1/2 c
    cheddar cheese, shredded
  • salt and pepper to taste

How To Make leftover fish (or turkey) casserole

    Cut the fish into bite size pieces and set aside. In a pot over medium heat add the olive oil and flour and stir for a minute. Add the bouillon cube and gradually add the water while stirring till it is fully incorporated. Gradually add the milk and stir well. Bring to a slow boil then add the vegetables and fish and stir.

    Add the cheeses, salt and pepper and stir well to make sure they are well distributed.

    Pour into a casserole and bake at 375 till the top is golden brown, about 30 - 40 minutes.
