THIS IS A CARIBBEAN STYLE DISH. I THINK THAT I HAVE DUPLICATED IT PERFECTLY. A TOUCH OF SPICE AND SWEETNESS, THAT IS JUST RIGHT.

Ingredients For beef,black bean,& sweet potato casserole

1 lbground chuck

18 oz. can tomato sauce

1 Tbspchili powder
-
1 tspground cumin
-
1/2 tspsalt
-
115 oz. can black beans, drained

2medium sweet potatoes peeled and thinly sliced

1/3 cchopped raisins
-
3plum tomatoes chopped
-
1green chili seeded and chopped
-
1small onion chopped
-
1 cshredded cheddar cheese
How To Make beef,black bean,& sweet potato casserole

1PRE HEAT OVEN TO 350. GREASE A 3- QUART BAKING DISH. SPREAD THE BEANS IN AN EVEN LAYER ON BOTTOM OF DISH. LAYER THE POTATOES OVER THE BEANS. SPRINKLE WITH THE RAISINS, TOMATOES, CHILI AND ONION. SET ASIDE.

2BROWN BEEF OVER MEDIUM HEAT, DRAIN. STIR IN TOMATO SAUCE, CHILI POWDER, CUMIN AND SALT. SPREAD OVER TO OF VEGETABLES.

3COVER AND BAKE FOR 45 MINUTES. UNCOVER, SPREAD CHEESE ON TOP AND BAKE 15 MINUTES LONGER.
