1 cbutter, room temperature

2 lgeggs

2 cbrown sugar, firmly packed

1 tsppure vanilla extract

1 cnuts, chopped, your choice

3 cflour, sifted

1 tspbaking soda

1/4 tspsalt
How To Make butterscotch slice cookies

1In a medium mixing bowl, sift together flour, baking soda & salt. Set aside.

2In a large mixing bowl using a hand mixer, cream together butter, brown sugar & vanilla. Add eggs one at a time. Add flour mixture one cup at a time & mix well. Stir in chopped nuts.

3Place dough on wax paper and form into 2" rolls. Refrigerate overnight.

4Preheat oven to 375º F. Slice into 1/8" slices & bake on an ungreased baking sheet for 5 - 6 minutes.

5Allow to cool slightly before removing from baking sheet.

6NOTES: Makes a great cookie to be served with tea or coffee. Dough freezes well. Dough is easier to cut when frozen. If using this method, allow cookies to sit 3 - 4 minutes on a cool baking sheet before baking.
