Any flavor Newton will do, I think the raspberry is my favorite. You probably can mix and match too. Maybe apple cinnamon with some fig. Be creative. Have fun baking! Enjoy!

- BATTER

1/3 cunsalted butter, softened

1/2 csugar

1 lgegg

1 tspvanilla extract

1 1/4 cflour

1 1/2 tspbaking powder

1/2 tspsalt

1/2 cmilk
- FILLING

2/3 cbrown sugar, firmly packed

1 tspcinnamon

2 Tbspunsalted butter, cold

15fig newton cookies, crumbled
- CRUMBLE TOPPING

1 cflour
-
1/3 csugar
-
1/3 cbrown sugar, firmly packed

1/4 tspsalt

1/2 coats

1 stickcold unsalted butter, cubed
How To Make fig newton coffee cake

1Preheat oven to 350 degrees. Grease an 8" X 8" or 9" X 9" baking pan.

2For batter cream butter and sugar together and beat in eggs and vanilla.

3Combine flour, baking powder and salt; add to creamed mixture alternately with milk; set aside.

4For filling combine brown sugar, cinnamon and cut in butter until crumbly. Fold in crumbled cookies; set aside.

5Spread a third of the batter into pan. Top with half of the filling. Repeat layers. Top with remaining batter.

6For topping stir together flour, sugars and salt. Cut in butter and stir in oats. Press together and top coffee cake with large crumbles.

7Bake for 35-40 minutes or until golden brown. Cool on a wire rack before cutting.
