I found these on Paula Deen's website. I haven't made them yet, but plan on it for Easter & wanted to post 'em before then. I'll post my pics when I get 'em made.

Ingredients For bunny cupcakes

2 1/2 call purpose flour

1/2 tspsalt
-
2 tspbaking powder
-
1/2 tspbaking soda
-
1 tspvanilla extract
-
1/2 cmilk
-
1/2 cvegetable oil
-
1 stickbutter
-
1 csugar
-
3eggs
- FOR DECORATING
-
3 ccoconut, shredded
-
18 lgmarshmallows, cut in half
-
36mini marshmallows
-
black licorice rope, for whiskers
-
colored chocolate candies or jelly beans
- VANILLA BUTTERCREAM FROSTING

2 stickbutter, room temperature
-
8 cconfectioners' sugar
-
1/2 cmilk
-
2 tspvanilla extract
How To Make bunny cupcakes

1preheat oven to 350 degrees

2In a large bowl, whisk together the flour, salt baking powder and baking soda.

3In another bowl, whisk together the vanilla, milk & vegetable oil.

4Cream together the butter and sugar with a hand held mixer in a large bowl. Add eggs 1 at a time and mix to combine. alternate the dry and wet ingredients to the butter, sugar & egg mixture, starting and ending with the dry ingredients.

5Pour the batter 2/3 full (I use an Ice Cream Scoop) into paper lined cupcake pans and bake for 15 to 20 minutes. Remove from oven and allow to cool before frosting and decorating.

6Vanilla Buttercream Frosting

7In a large bowl, cream softened butter and add 4 cups sugear, milk and vanilla. Beat until smooth and gradually add the rest of the sugar to reach frosting consistency. (Thsi step actually called for a standing mixer with a paddle attachement, but since I don't have one.....)

8To Decorate

9Frost tops of cooled cupcakes with a thick layer of frosting and dip into coconut (pressing down into the coconut). Place one half of each large marshmallow on an angle for each ear (note: you might have to use a little frosting as glue or Toothpicks). Add colored chocolate candies for eyes and nose. Add two miniature marshmallows ( I Used Colored ones)for cheeks. Cut 6 small pieces of rope licorice for whiskers.
