"A favorite soup recipe - Classic French Onion Soup...."
INGREDIENTS

1.5 lbs. (about 5 cups) peeled and thinly sliced yellow onions -- approximately 4-5 large onions
•
4 Tbsp. olive oil (or Julia prefers butter!)
•
1/4 tsp. sugar
•
3 cloves garlic, minced
•
3 Tbsp. flour
•
8 cups of beef stock or chicken stock (or a combination of the two)
•
1/2 cup dry white wine or dry white vermouth
•
1 tsp. worcestershire sauce (optional)
•
1 bay leaf
•
1/4 teaspoon of dry thyme
•
salt and freshly ground black pepper to taste
•
toasted french bread, or croutons
•
1-2 cups of grated Swiss Gruyere (or Asagio, Swiss, Mozzarella or Parmesan) cheese
