INGREDIENTS
1 1/4 cups all-purpose flour
1/2 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
1 tsp ground cinnamon
1/8 tsp ground nutmeg
1 1/2 cups very finely shredded carrots (from about 4 medium carrots)*
2/3 cup granulated sugar
1/3 cup packed light-brown sugar
2 large eggs
1/4 cup unsweetened applesauce
1 tsp vanilla extract
1/2 cup vegetable oil
2/3 cup chopped pecans
1/2 cup butter, softened (I like to use 1/4 cup unsalted, 1/4 cup salted)
6 oz cream cheese, softened
3 1/4 cups powdered sugar
1/2 tsp vanilla extract
