I included "super" in the name of my recipe because it is super easy, super fast & super delicious. It's also super portable. Just wrap in foil or wax paper, for eating on the run.

Ingredients For sausage egg & cheese super breakfast sandwich

1 lgfrozen breakfast sausage patty (see *note)

1 mdsesame seed bun (or your favorite)

1 Tbspsalted butter, softened divided

1 sliceamerican cheese
-
1 lgegg
-
1 pinchfine sea salt
-
1/8 cshredded extra-sharp (or sharp) cheddar cheese

1/2-1 tspfresh chives
-
salt and pepper to taste (optional)
How To Make sausage egg & cheese super breakfast sandwich

1*NOTE: You may use any fully cooked breakfast sausage patty, provided that it is warm.

2Cook sausage according to package directions (or warm cooked patty; I use the microwave for either.)

3Spread both bun halves with 1/4 of the butter; place on toaster oven pan.

4Toast bun halves in toaster oven on medium-light setting.

5After toasting, place American cheese slice on one bun half.

6Place sausage on remaining bun half.

7In a small nonstick skillet, melt remaining butter over medium heat; swirl to coat surface of pan.

8In a small bowl/cup, beat egg and pinch of salt with a fork.

9Pour egg in to skillet; allow to cook, for about 30-45 seconds, without stirring.

10When egg has begun to cook, stir slightly and fold onto itself.

11When almost cooked, but still a little loose, flip egg over & shut off heat.

12Add shredded cheddar to top of egg.

13Remove egg from skillet; place on top of bun half with the cheese slice on it.

14Sprinkle with chives. (Add salt & pepper to taste, if desired.)

15Place remaining bun half, with sausage, on top of egg & cheese bun half, sausage first.

16Serve hot or wrap in foil, wax paper or parchment paper for "breakfast on-the-go."
