I included "super" in the name of my recipe because it is super easy, super fast & super delicious. It's also super portable. Just wrap in foil or wax paper, for eating on the run.

Ingredients For sausage egg & cheese super breakfast sandwich

  • 1 lg
    frozen breakfast sausage patty (see *note)
  • 1 md
    sesame seed bun (or your favorite)
  • 1 Tbsp
    salted butter, softened divided
  • 1 slice
    american cheese
  • 1 lg
    egg
  • 1 pinch
    fine sea salt
  • 1/8 c
    shredded extra-sharp (or sharp) cheddar cheese
  • 1/2-1 tsp
    fresh chives
  • salt and pepper to taste (optional)

How To Make sausage egg & cheese super breakfast sandwich

    *NOTE: You may use any fully cooked breakfast sausage patty, provided that it is warm.

    Cook sausage according to package directions (or warm cooked patty; I use the microwave for either.)

    Spread both bun halves with 1/4 of the butter; place on toaster oven pan.

    Toast bun halves in toaster oven on medium-light setting.

    After toasting, place American cheese slice on one bun half.
  • 6
    Place sausage on remaining bun half.

    In a small nonstick skillet, melt remaining butter over medium heat; swirl to coat surface of pan.

    In a small bowl/cup, beat egg and pinch of salt with a fork.

    Pour egg in to skillet; allow to cook, for about 30-45 seconds, without stirring.

    When egg has begun to cook, stir slightly and fold onto itself.

    When almost cooked, but still a little loose, flip egg over & shut off heat.

    Add shredded cheddar to top of egg.

    Remove egg from skillet; place on top of bun half with the cheese slice on it.

    Sprinkle with chives. (Add salt & pepper to taste, if desired.)

    Place remaining bun half, with sausage, on top of egg & cheese bun half, sausage first.

    Serve hot or wrap in foil, wax paper or parchment paper for "breakfast on-the-go."
