Still on the quest for good, lower carb bread. There is a mix for bread machines, by Bob's Red Mill, that works beautifully. I tried it today and it's really good. Easy, too - and the package has directions for doing it by hand also, in case you don't have a bread machine. Each slice of the bread has 9 grams carbohydrates, 4 of them are fiber; 1.5 grams fat, and 11 grams protein. 110 calories per slice.

Ingredients

  • 1 pound package bob's red mill low carb bread mix
  • 3/4 cup warm water (85-90°)
  • 3/4 cup heavy cream
  • 1 - egg, slightly beaten
  • 2 tablespoons canola oil

How To Make bob's red mill low carb bread (bread machine)

  • Step 1
    Remove yeast packet from bread mix and set aside. Place water, cream, egg, and oil in the bottom of the bread machine pan.
  • Step 2
    Carefully put the bread mix on top of the wet ingredients in the pan. Make a well in the center of the flour mix. Put the yeast into the well, being careful not to let the yeast touch the liquid.
  • Step 3
    Close lid on bread machine and set to process for a basic 2 pound loaf with a medium crust. Start machine. Bread should be done in about 3 hours.
  • Step 4
    When done, remove pan from machine and allow to cool 5 minutes, then remove loaf from pan to finish cooling. Slice when cool into about 20 slices if you want to match the nutritional information given in the notes.
