Serve these tiny olive breads as a pre-dinner snack with a glass of wine or a beer or as a part of a finger food buffet. They will also make a great addition to a picnic or a champagne brunch. If you are preparing for a large party and cooking a lot of food, think ahead and bake these olive balls 3 days in advance. Store in an airtight container at room temperature. Crisp in preheated oven (200) for 3 minutes before serving.

Ingredients For olive-cheese balls

  • 2 c
    finely grated cheddar cheese
  • 1/2 c
    butter, softened
  • 1/4 tsp
    hot pepper sauce
  • 1/2 tsp
    salt
  • 1 tsp
    paprika
  • 1 c
    all purpose flour, unsifted
  • 36
    pimento-stuffed green olives (approx.)

How To Make olive-cheese balls

  • 1
    Mix thoroughly cheese, butter, hot pepper sauce, salt, paprika and flour. Form portion of dough around each well drained olive.

    Place on a baking sheet lined with parchment. Refrigerate until firm, about 30 minutes. Brush pastry with beaten egg. Bake until golden, about 15 to 20 minutes. Serve warm or at room temperature.

    NOTE: Optional.....Before baking, sprinkle with sesame seeds.
