When my mother passed away, a close family friend made us two fantastic cakes. This apple cake is one of them! Both my father and my boyfriend couldn't stop raving about this one and said they could eat this cake all day, every day. When I took this cake to work for a carry-in, a coworker said it was the best thing she's ever had in her mouth. I told her she's a newlywed, so she better be careful what she says ;)

There are chunks of apple in every bite. The cake is moist and has a wonderful buttery cinnamon flavor. Walnuts give the cake a nice crunch. But that glaze ... sweet and buttery it takes the cake over the top.
Ingredients For kentucky apple cake

2 stickmargarine

2 csugar

2 lgeggs

2 1/2 call-purpose flour

2 tspbaking powder

1 tspbaking soda

1/8 tspsalt

2 tspcinnamon

3 cfinely chopped apples

1 cchopped walnuts

2-3 Tbspmilk
- GLAZE

3/4 csugar

1/2 cmargarine

1/4 cbuttermilk

1 Tbsplight corn syrup

1/4 tspbaking soda

1 tspreal vanilla extract
How To Make kentucky apple cake

1Cream margarine and sugar in a bowl.

2Mix in eggs one at a time.

3In another bowl, combine flour, baking powder, baking soda, salt, and cinnamon. Mix dry ingredients into the butter/sugar.

4Fold in the chopped apples, walnuts, and milk.

5Grease and flour a 9x13 pan. Spread apple cake batter evenly in pan.

6Bake at 350 degrees for 50 minutes to 1 hour, or until a toothpick comes out without raw batter on it.

7While the cake is baking, combine all the glaze ingredients except the vanilla in a medium pan. Stir and cook to a rolling boil. Remove from heat and add 1 teaspoon of vanilla.

8Pour and spread glaze over hot cake as soon as the cake is removed from the oven.

9Let cake cool completely before serving. The longer it sits, the better it gets!
