French market soup is hearty, meaty, full of flavor, and versatile. It's perfect for Christmas Eve get-togethers with family! I also use it to meet all of my late mother's Southern "good luck" menu requirements for New Year's Day.

Ingredients For french market soup

2 c15-bean dry bean mix

1 Tbspsalt

3 cwater

1ham hock or meaty ham bone

2bay leaves

28 ozdiced tomatoes

2onions, chopped

2 clovegarlic

6 stalkchopped celery

1 dashcayenne pepper

1 lbsliced turkey sausage

4-5chicken thighs
How To Make french market soup

1Add beans, salt, 3 c. water, ham hock, and bay leaves in a large pot. Simmer covered 3 hours.

2Add tomatoes, onions, garlic cloves, and celery. Add pinch cayenne. Simmer 1-1/2 hours uncovered.

3Add smoked turkey sausage and chicken thighs. Cook until chicken falls off bones.

4Remove bones, return chicken to the soup, season to taste, as needed, with some red chunky salsa, more salt, pepper, garlic powder, a squeeze of lime, etc. Enjoy! Reheats beautifully.
