French market soup is hearty, meaty, full of flavor, and versatile. It's perfect for Christmas Eve get-togethers with family! I also use it to meet all of my late mother's Southern "good luck" menu requirements for New Year's Day.

This makes a big ole pot of soup that's full of meat, beans, and veggies. It smells wonderful while simmering and you can hardly wait for this to be done. The beans cook down and make the soup thick and hearty. Perfect for those cooler months served with a piece of corn bread.

Ingredients For french market soup

  • 2 c
    15-bean dry bean mix
  • 1 Tbsp
    salt
  • 3 c
    water
  • 1
    ham hock or meaty ham bone
  • 2
    bay leaves
  • 28 oz
    diced tomatoes
  • 2
    onions, chopped
  • 2 clove
    garlic
  • 6 stalk
    chopped celery
  • 1 dash
    cayenne pepper
  • 1 lb
    sliced turkey sausage
  • 4-5
    chicken thighs

How To Make french market soup

  • Beans, salt, water, ham hock, and bay leaves in a large pot.

    Add beans, salt, 3 c. water, ham hock, and bay leaves in a large pot. Simmer covered 3 hours.
  • Tomatoes, onions, garlic cloves, and celery added to the pot.

    Add tomatoes, onions, garlic cloves, and celery. Add pinch cayenne. Simmer 1-1/2 hours uncovered.
  • Smoked sausage and turkey added to the pot.

    Add smoked turkey sausage and chicken thighs. Cook until chicken falls off bones.
  • Bones removed from the chicken and meat returned to the pot.

    Remove bones, return chicken to the soup, season to taste, as needed, with some red chunky salsa, more salt, pepper, garlic powder, a squeeze of lime, etc. Enjoy! Reheats beautifully.
