Ingredients For bunyan's diabetic chicken cacciatore

  • 2 clove
    minced garlic
  • 1 sm
    diced onion
  • 1 sm
    green bell pepper
  • 3 Tbsp
    extra virgin olive oil
  • 1 small can
    crushed tomatoes
  • 1 c
    water
  • 1/2
    bay leaf
  • 1/2 tsp
    chili powder
  • 1/4 tsp
    dry oregano
  • 3/4 tsp
    sea salt
  • 6
    boneless skinless chicken breasts
  • 1 c
    flour
  • 1/2 tsp
    fresh cracked black pepper
  • 1/4 c
    olive oil, extra virgin

How To Make bunyan's diabetic chicken cacciatore

    Wash the chicken under running water and drain
  • 2
    Add the olive oil to a heavy skillet, brown the chicken lightly
  • 3
    place chicken in a 13X9 baking pan, set aside
  • 4
    In the same skillet used to brown the chicken, saute the garlic, onions, & peppers until tender
  • 5
    Add tomatoes, water, bay leaf, chili powder, oregano & salt
  • 6
    Simmer 1 1/2 hours

    Pour over the chicken

    Bake in a pre heated 325 oven for 30 mins or until the chicken is thoroughly cooked
