Ingredients For bunyan's diabetic chicken cacciatore

2 cloveminced garlic
-
1 smdiced onion
-
1 smgreen bell pepper
-
3 Tbspextra virgin olive oil
-
1 small cancrushed tomatoes
-
1 cwater
-
1/2bay leaf
-
1/2 tspchili powder
-
1/4 tspdry oregano
-
3/4 tspsea salt
-
6boneless skinless chicken breasts
-
1 cflour
-
1/2 tspfresh cracked black pepper
-
1/4 colive oil, extra virgin
How To Make bunyan's diabetic chicken cacciatore

1Wash the chicken under running water and drain

2Add the olive oil to a heavy skillet, brown the chicken lightly
-
3place chicken in a 13X9 baking pan, set aside

4In the same skillet used to brown the chicken, saute the garlic, onions, & peppers until tender
-
5Add tomatoes, water, bay leaf, chili powder, oregano & salt
-
6Simmer 1 1/2 hours

7Pour over the chicken

8Bake in a pre heated 325 oven for 30 mins or until the chicken is thoroughly cooked
