I am not a fan of mayonnaise, but I could eat this corn ALL summer long! If you hate mayo, you can sub it out with extra butter.

This recipe does sound crazy but it's the perfect way to enjoy fresh corn this summer. Once grilled inside foil, it's wonderfully tender. Brushing with mayonnaise and sprinkling with Cajun seasoning and Parmesan cheese is salty and tangy. The flavor combination is a delicious contrast to the sweet corn.

Ingredients For crazy corn

  • 6
    ears of fresh corn
  • 4 Tbsp
    butter, melted
  • 1-2 tsp
    mayonnaise, per ear
  • 1/8 tsp
    Cajun seasoninig, per ear
  • 2 Tbsp
    shredded Parmesan cheese, per ear

We grilled the corn for 30 minutes, turning every 10 minutes. Depending on the salt in your Cajun seasoning, the Parmesan cheese may need to be adjusted.
  • When shucking the corn, leave the ends on the corn.

    When shucking the corn, leave the end knob on each ear because you'll use this for a handle.
  • Brush corn with melted butter.

    Lightly brush melted butter onto the corn.
  • Wrap each ear with foil.

    Wrap each ear of corn separately with foil.
  • Grill the corn.

    Place the corn on the grill, not on immediate fire. Keep rotating the corn until cooked. Time will vary.
  • Brush cooked corn with mayonnaise.

    Brush a layer of mayonnaise on the cooked corn.
  • Sprinkle Cajun seasoning.

    Then sprinkle the Cajun seasoning.
  • Sprinkle Parmesan over the Crazy Corn.
