I have been making this sauerkraut casserole recipe for years. My mom taught me, and I taught my son. Even if you think you don't like sauerkraut, you will LOVE this. The brown sugar makes it sweet. It is out of this world! Sauerkraut naysayers, give it a try. This recipe is great and easy to make ahead of time. Just assemble and throw it in the fridge, then pull it out when you get home from work and pop it in the oven. If you do this, though, you may need to adjust your baking time to closer to 60 minutes.

This sauerkraut casserole is easy and delicious! Brown sugar mixes with the sauerkraut to mellow the tang from the sauerkraut. There are plenty of noodles that mix with the ground beef (or ground turkey if you opt to use that) and tomato sauce. Melted Swiss cheese on top adds nuttiness and gooey cheese. This makes a very large casserole, and layering it almost reminds us of a lasagna. A hearty and filling meal.

Ingredients

  • 2 pounds ground beef or ground turkey
  • 1 medium onion, chopped
  • - garlic powder with parsley, to taste

  • 2 cans sauerkraut, drained very well (14.5 oz each)
  • 2 cans tomato soup (10.75 oz each)
  • 1 can warm water (10.75 oz)
  • 1 package wide egg noodles (16 oz)
  • 3/4 cup brown sugar
  • 2 cups shredded Swiss cheese
